If you have any interest in film or how anime is made, having a rough cut of a film and being able to compare it to the finished product is a godsend. Likewise, trying to emulate the original experience of how Death and Rebirth was shown in theatres (which has NEVER been possible sadly) is a reason why one would desire the original cut of Rebirth rather than the edit taken from the finished product. 

There are legitimate reasons to lament Gainax's decision to shelve Rebirth as originally shown in favor of a "Rebirth" cut from End of Eva.
