I just finished watching the whole series again, it's amazing what new
things you pick up on ach successive time you watch it.  One item that
showed what exactly Eva is was shown nicely I think in 19 or 20, and 23
where we see the Eva graveyard w/all the failed Eva's. I liked how they
showed us what the Eva's look like on the inside and how they were
constucted.  Another good example of what an Eva is in the episode where
Shiji and the Angel are fighting in the geofront, unit 1 awakens and
breaks all the restaints.  We then get a good view of what the Eva
really is.

I wrote this down somewhere as I was shocked when I heard this, "Eva is
man's attempt to create a god."  Which we already knew that the Eva's
had a soul, but I never really thought of them as a god.
