The orange Eva was the development prototype, and was shown in episodes 5
and 6. It was used to battle the 5th angel. In the battle it was higly
damaged. Between the end of that battle and episode 11, Unit 00 was
retrofitted to a more combat-ready configuration. (The fins were added,
and the color scheme was changed from shoot-me-orange to police-car-blue.)
This is the same Eva, just in a slightly new configuration. 

Most of the above can easily be discerned from watching the series, BTW.
