Well then I'd have to say, in turn, that that's "Rei", not Lilith. 
So, the scene does not symbolize the birth of Adam from Lilith.

I'm just saying that [in this case at least] you can't "have your cake
and eat it to". Either that scene does not symbolize anything in
particular, or if you accept that it symbolizes Adam being born from
Lilith, then you have to also acknowledge that it also symbolizes Lilith
being born from Adam - in which case it is also alludes to their
equality.
