[EVA] anatamy of an Eva

Are they? I can think of at least two occasions in which they are not, episode 2
and episode 16 (the *Eva* is covered with blood in this case, but its mouth is
actually encased in sort of an armor). It really looks cool, and afterwards,
when we're shown the true nature of Eva, we can also gasp seeing it's teethed
mouth.

And in fact in the manga it is explicitly said that the Eva breaks it's facial
armor by doing that, and in the tv series you can see tiny metal pieces flying
away and hear a loud bang.
