In this case, the problem is easily ficed clearing the science fiction
border. Besides, many things were thought to be impossible and were proven
otherwise. That she was "born" after Yui's death is not in question, so that
she was either "created" like that (Rei I) or as an embryo and then
force-grown, her developement wasn't a normal one in any case.
