It's really hard to tell. When Unit-02 was dismembered you could see that
there were significant ammounts of entrails inside, at least in the
abdomenal cavity. The EVA graveyard looked like mostly skeletons were left
behind with a few techno-bits.

Based on the appearance of the EVA's we could possibly surmise that they
would be best called cyborgs. Their metal exterior is an armor protecting
them in combat with a mixture of machine and flesh through the rest of the
body.

Lilith appeared to be basically human in form and we can assume that there
are bones inside, at least based on how Rei fell apart. This means that they
took the initial proto-human form and grafted on armor and techno-doodads.
Not quite like robocop here since robocop was basically just the face and
brains of a human with the rest of the body being inorganic. The Borg would
probably be the closest sci-fi comparison for what an EVA is like inside.

They mentioned EVA's have a finite limit for self-regeneration, the
hoftszaggler limit or something like that. Based on this we can assume that
a banged up EVA would have missing limbs reattached and the flesh would grow
to fill those spaces again.

The one thing that is not clear, the EVAs are electrically powered yet are
organic. Furthermore, they are capable of self-activation without any source
of power. The question here is what is that electricity used for? Perhaps it
is not used in a directly mechancial sense like in an electric car, i.e.
battery energy converted to motion by motors. Perhaps the electricity serves
as a stimulator for driving the EVA flesh to action and that when the
batteries run out of juice the EVA can no longer be successfully prodded
along. Self-activation means that the soul inside is finally ready to act on
its own and when it is doing so the electric prodding is no longer needed
(such as EVA-01 defending Shinji-baka). This is speculation on my part. The
whole point of the self-activation probably done for nothing more than the
drama of the moment with no long-term implications.
