As stated by various Gainax staff (Tsurumaki, etc.), Judeo-Christian imagery
were only used to provide an exotic and coherent setting, and have no deeper
meaning in Eva other than where the symbolism might match the originally
intended message which is that Eva is a show about "human communication and
problems of the heart". (direct quote)
Anno is neither Jewish nor Christian, and his study of these areas is typical
of the in-depth study of setting materials that Japanese anime/manga creators
do when creating a story.
Other Japanese anime/manga also use foreign religions (ie: 3x3 Eyes), but this
does not mean that the directors/authors adhere to these religions either.
Again, it is only for setting and to provide an exotic flavor for domestic
Japanese audiences in the same manner that Japanese and Chinese characters are
often (mistakenly) used overseas on clothing and other objects because they
"look cool".
