The version of "Rebirth" on the Manga DVD is in fact
the animation from the first 30mins of Air (EoE, part
1) spliced in between the title cards and end credits
of Rebirth. Rebirth was originally something of a
work-print for Air, with some rough/unfinished
animation and temp music tracks. It was released with
Death in order to appease fans waiting for the movie
(originally, there was never going to be a "The End of
Evangelion" - only "Death & Rebirth", but as
production went on Death got longer and Rebirth fell
behind schedule). Thus in a sense, this version of
"Rebirth" is a 'final cut' of the segment. Sort of
like DEATH(True)^2 is the 'final cut' of Death.

It should be noted that Keith Burgess from Manga
Entertainment has stated at least twice now that the
version of D&R being released on DVD in the US is
consitent with what they were supplied by Studio
Gainax. Manga Ent, apparently, did not edit this
release at all and everything is as was intended by
Gainax. Considering the way Gainax likes to fine-tune
Evangelion (ie: Death, Death(true), Death(true)^2,
director's cut episodes), I don't find this change as
coming from Gainax's end very hard to believe...

It'll be interesting to see how Madman Ent's release
in Australia will be set up (when is that disc coming
out?)
