The closest you'll get is EVA-R (http://www.eva-r.com). It's a 
fanfiction projekt of over twenty long chapters already, with one main 
and one alternate direction, and with fanart and fan music and even 
comic and movie adaptations. And it's pretty close to the original in 
style. Not that I would call it canon (nobody from Gainax is involved in 
this, but it claims to be sanctioned by Anno himself), but it's very 
well known and has spawned a number of fanfics of its own.

I personally think that if anything would fit well into the canon, it's 
EVA Hentai. ;)
